Dietary fats, particularly unsaturated fats act as a stimulus for the secretion of bile into the duodenum. EVOO contains approximately 55-83% oleic acid content. That can be the reason for its robust role in the secretion of bile in the small intestine.

Bile acids emulsify fats (fat emulsification is the process in which they break down larger molecules into the smaller ones by the principle of hydrophobic exclusion). Scientific Research Evidence

Cholesterol provides as a the building blocks of bile acids production in the liver. Hepatocytes (liver cells) take up cholesterol from the bloodstream and after a series of enzymatic reactions, convert cholesterol into bile acids. The rate-limiting enzyme in this process is 7α-hydroxylase (CYP7A1). CYP7A1 converts the initial cholesterol into 7α-hydroxycholesterol. After this conversion, 7α-hydroxycholesterol converts into primary bile acids, such as cholic acid. After the conjugation of primary bile acids, they are modified into active bile acids (bile salts). Bile salts are the active forms of bile acids and function as detergents in emulsifying fats in the same way fabric detergents washes away oil stains.

A research study can provide the evidence of the virgin olive oil consumption and increment in the bile activity. A study published in the Journal of Agriculture and Food Chemistry (2003) with the title, Effect of Different Olive Oils on Bile Excretion in Rats Fed Cholesterol-Containing and Cholesterol-Free Diets shows that when rats are fed virgin olive oils such as EVOO, a significant increase in bile release and bile acid concentration are measured in different body fluids. In this research experiment, ordinary cholesterol oils and olive oils are given to rats. After the termination of experiment, an increase in the bile activity or concentration is measured in the body fluids of rats fed with virgin olive oils.


EVOO, no doubt is the most supreme of all olive oil forms. The main mystery lies in its high monounsaturated content and polyphenols.
